Breads
The bread here at Scratch is an integral part of who we are and what we do. We take great care and time to produce gorgeous loaves that feed both body and soul.
Like our bagels, most of our breads are leavened using our natural yeast culture, Lulu. We meticulously manage Lulu's feedings and temperature to ensure our breads are not overly sour but rather they have a depth of flavor (and a long shelf life) that comes from long fermentation and careful handling. Each loaf we bake is the reflection of a dynamic process that constantly changes with temperature, humidity, the flour we’re using and the spirit of the baker.
